Excellent sauteed with Garlic
Local Lacinata Kale from Bardwell Farm, Hatfield, MA
Lacinato, black, or Dino kale is very dark green, with remarkably firm, deeply ridged leaves. This kale takes a bit longer to cook than other greens; the upside of which is that the leaves hold their shape even under long cooking times, making it a great addition to soups and stews. Lacinato kale is also delicious simply cooked with garlic (and a bit of chile, if you like).
To Store: Place kale in a glass storage container preferably, or plastic storage bag removing as much of the air as possible. Store in the refrigerator where it will keep for 5 days. Longer storage will gradually increase its bitterness. Do not wash kale before storing because exposure to water encourages spoilage.
