How to use: Chard leaves can be sauteed and braised and then tossed into sauces, pastas, stuffings and omelets.

Remove leaves from stems by slicing along the outer edge of stems, and rinse both thoroughly in cool water -- you may need to rinse twice. To preserve the hues of the more colorful varieties, steam and toss with lemon juice just before serving. To cook stems and leaves together, chop stems into shorter pieces, steam or braise until almost done, and then add leaves and cook until wilted.

How to store: Because it's sensitive to ethylene gas, keep chard away from fruits that ripen after harvest, such as avocados, bananas, stone fruit and apples. Store unwashed leaves in a glass container preferably, or a plastic bag in the refrigerator for up to four days.
